So I am unofficially done canning. We have some apples in our garage that I have been wanting to disappear but they haven't. So on Saturday we made Red Hot Apples!! It's a new recipe that I hope will make plain old oatmeal delicious! It worked great to get rid of the apples, the only problem was that in order to finish the batch we needed more apples. So we got a whole other bushel of apples- what was I thinking!!! So now instead of being officially done, I now have to come up with something to do with the rest of them. The good part is they are good big red delicious and don't have worms, but bad part is, I WANTED TO BE DONE CANNING FOR
THE YEAR!! The other bad part is that we have ZERO quarts left (I even bought some new ones this year). So would anybody like some good apples for quick consumption or canning or whatever?

Grand Total of 262 quarts and 246 pints. So I used 508 flats and 40-50 batches in the hot water bath canners and pressuer cookers. We have also dehydrated tons of apples, a whole 5 gallon bucket full.
Some of my most favorite sounds and smells are the "pop" of a jar sealing, and the smell of a sharpy when I get it out to write the year on top of each jar. It makes me feel like I have done something good for my family. I couldn't have done so much without the help of Jake, he is so supportive and helpful, and I think he kind of likes it too. And my super friend Lesli we always do peaches and pears together and I know if I am out of flats I can run and borrow some from her.
I am excited to be done for the winter and start updating the scrapbooks,
that's my winter hobby.
